Instant Pot Chamoy Chicken Chili

Chili is one of those winter comfort meals that are easy to make and delicious to eat. I tend to have extra children during the week as my daughter's friends join us for dinner. When I was given the opportunity to try Chamoy thanks to Helados La Azteca sending me a bottle to try, I knew I wanted to do something a little different than what I was finding online. It was a cool night, chili was on the menu, and inspiration struck. Chamoy Chicken Chili in the instant pot!
What is Chamoy Sauce?
Chamoy is a condiment from Mexico that is usually found as a dip for fresh fruit. It is made with a blend of fruits like apricot, mango or plum with chilies and citrus juices and can vary in spice level.
My introduction to Chamoy came in a package from a business asking me to sample it. Helados La Azteca is a small company based in Waco, Texas. The story from their site talks about how they moved here from Mexico and were disappointed that they could not find the flavors they had grown up within the area. It was because of this they decided to launch their own venture, bringing Mexican snack foods and Chamoy sauce to their new home. They make their sauce with all-natural ingredients making it SUPER healthy!

How Would You Use Chamoy Sauce?
Chamoy sauce is like a Mexican version of ketchup or other condiment. Most commonly found on fruit carts, chamoy is put on fresh mango slices with a squeeze of lime juice and a sprinkle of salt. It is also found in jars to use as a dip for thicker vegetables and firmer fruits.
Another application is to use is for frozen desserts as a topping. Find your favorite sorbet or shaved ice and you can use chamoy as a drizzle on top to give it a spicy kick. Along these lines, a chamoyada is an icy drink made with shaved eyes, fruit and chamoy!
If you are familiar with Mexican drinks, a Michelada (Mexican Bloody Mary) is made with beer, lime juice, spice, tomato juice, chili peppers and chamoy served in a chilled, salt-rimmed glass.
Using Chamoy in Chicken Chili
When I saw the flavor profile of the chamoy, my mind immediately went to chili. I'll be working on other recipes as well, but I just had to make this first. It was absolutely delicious, super filling and really healthy! I made mine in the instant pot, but you can easily adapt this recipe for a slow cooker or a dutch oven on the stove.

Sassy Chamoy Chicken Chili
Using traditional Mexican flavors in a sweet and spicy Chamoy sauce, this Chicken Chili is the comfort food you have been searching for!
Ingredients
- 2 lbs Lean Ground Chicken
- 1 Zucchini (medium) , Diced
- 1 Bell Pepper, Diced
- 15 oz Black Beans, Rinsed
- 28 oz Crushed Tomatoes
- 15 oz Corn
- 6 tbsp Chamoy Sauce
Instructions
- Turn your instant pot on to saute and brown the ground chicken.
- Once the chicken has cooked through, add in the fresh vegetables and allow it to cook down for about 2-3 minutes.
- Add in remaining ingredients, turn the instant pot to chili and put on the lid.
- You can use quick release to release the pressure, stir it and then serve!
