This healthy and easy skillet meal is just perfect for busy evenings. It's full of delicious ingredients, such as chicken and a savory peach compote which becomes the glaze. It can be thrown together quickly and tastes as if it took you all day to make. The crucial part of this recipe is the savory peach compote. When you make the peach compote ahead of time and refrigerate it, it will add a completely different dimension to the dish when it's heated later. The sweetness of the peach balanced with the savory notes of garlic, crushed red pepper, cinnamon and rosemary give it this wondrous flavor you'll make over and over again.

The original recipe called for chicken thighs, however I like using boneless skinless chicken breasts for this as it's healthier for weight watchers points.

Absolutely, if you prefer baked chicken, instead of cutting the chicken breast into cubes, leave it whole and place it in a casserole dish and add the peach compote sauce to create the glaze on top. Bake at 350 for about 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

Peach Chicken and Rice

While I have this peach chicken served over white rice, you can easily use brown rice or cauliflower rice to save on points!

Ingredients

  • Cooking Spray
  • 1 lb. boneless, skinless chicken breast, cubed
  • 1 t. garlic powder
  • Sea salt and black pepper, to taste
  • 1¼ c. savory peach compote*
  • 1/2 cup cooked brown rice

Instructions

  1. Heat a skillet over medium heat and spray with your favorite cooking spray.
  2. Add in the cubed up chicken and season with garlic powder, salt and pepper. Saute until chicken is browned on all sides.
  3. Using my savory peach compote recipe, add it to the skillet and stir to combine.
  4. Follow cooking instructions for your favorite rice and serve the chicken over top, pouring the extra sauce over top. Sprinkle with sesame seeds, if desired.
