Instant Pot Low Points Egg Roll in a Bowl Recipe
One of my favorite guilty pleasures is Chinese food. There is just something divine in the crunch of a greasy egg roll at the end of a long day. It is probably because it reminds me of my younger years, stashing them in the fridge for breakfast the next morning. Now that I'm older and trying to eat healthier, I wanted to find a way to capture the same flavors of an egg roll without the guilt of fried food.
It was in that moment a dear friend shared a recipe with me for “Egg Roll in a Bowl”. I have a small obsession with anything I can cook in one pot and then have a meal right in one bowl. When there are less dishes that need to be washed at the end of the day, I am definitely a happier person.
Alas, I'm rambling a bit. I know you're probably asking yourself…
What is Egg Roll in a Bowl?
To put it simply, it's the inside of an egg roll cooked down and served in a bowl. For a longer explanation, it is your choice of a protein browned with ginger and garlic, mixed in with a blend of cooked cabbage, shredded carrots and soy sauce and then served in a bowl with sesame seeds on top.
This is such a versatile recipe as the protein choice can completely change the flavor of the dish. You also have the option of adding in bok choy, bean sprouts or other vegetables to bulk up your bowl.

How Do You Make Egg Roll in a Bowl in an Instant Pot?
I originally discovered the recipe on Whole New Mom's Blog. However, I have modified the recipe to make it something simple, with fewer ingredients and less fuss but with all the same wonderful flavors.
What Kind of Meat is in the Egg Roll in a Bowl?
As I mentioned previously, this is a really versatile recipe, so you can choose your protein. This bowl works great with any kind of ground beef, pork, turkey or even chicken. For this meal, I chose grass-fed ground beef which may be higher in points but my family prefers beef. I have made it with ground chicken before, even opting to add sriracha and sliced radishes to give it a heat element and more crunch.
Can Egg Roll in a Bowl be Vegetarian?
There are always ways to make this recipe into a vegetarian dish. I would recommend using either tofu or cauliflower as both are like sponges for flavor.
If you opt to use Tofu: I suggest sauteing the tofu in a separate pan to give it a nice texture and top with the cabbage blend.
If you opt to use Cauliflower: If you leave the cauliflower in florets, it will take on the look and mouth feel of bite sized pieces of chicken. You can also choose to rice the cauliflower and use that as a base to turn this egg roll into more of a fried rice dish.
How do I make Egg Roll in a Bowl?
Turn the instant pot on to saute and brown the meat of your choice. While the meat is cooking, stir in 3 cloves of grated garlic and grated ginger to taste (I like more ginger than most) and a quick sprinkle of salt and pepper. Once it has completed cooked through, add 1/2 cup of your favorite stock. Personally, I enjoy using unsalted beef broth.
On top, pour in a single bag of shredded coleslaw mix. It's a mix of cabbage and shredded carrots that I usually pick up at Publix or Walmart.
DO NOT MIX OR STIR!!!!
Add the lid and turn your instant pot on to manual pressure with a 0-1 minute time limit, depending on how tender you want the cabbage. Once the timer goes off, quick release the pressure and take off the lid. Stir everything together and then add soy sauce to taste. Serve it in a bowl with a sprinkle of sesame seeds on top.
I think my favorite part about this meal is that it's great for meal prepping. I can portion this out into containers for lunches throughout the week. Play around with the recipe, choose different meats, add in broccoli stir fry, change up your bowls!
Egg Roll in a Bowl
- Instant Pot
- 1 bag Shredded Coleslaw Mix
- 1 lb 95/5 Lean Ground Beef (16 points)
- ½ cup Unsalted Beef Broth
- 3 cloves Garlic crushed
- Fresh Ginger grated
- ¼ tsp Salt
- ¼ tsp Pepper
- 3 tbsp Low Sodium Soy Sauce (to taste)
- 1 tsp Sesame Seeds garnish
- Brown the meat under the saute option on your instant pot.
- Season with all the seasonings as it browns. Drain excess fat.
- Add in the broth, then the coleslaw mix on top.
- DO NOT STIR, just add the lid.
- Turn on manual pressure for 0-1 minutes depending on how you like your cabbage cooked, quick release the steam.
- Serve in a bowl with a little soy sauce and sesame seeds.
Egg Roll in a Bowl is one of those recipes my 7-year-old daughter can make herself. In fact, she frequently jumps into the kitchen with me when I'm making it! The joy of teaching our children healthier cooking and eating habits is something to treasure.
