When you make the peach compote ahead of time and refrigerate it, it will add a completely different dimension to the dish when it’s heated later. The sweetness of the peach balanced with the savory notes of garlic, crushed red pepper, cinnamon and rosemary give it this wondrous flavor you’ll make over and over again.

The original recipe called for chicken thighs, however I like using boneless skinless chicken breasts for this as it’s healthier for weight watchers points.

Can this be made in the oven instead of on the stove?

Absolutely, if you prefer baked chicken, instead of cutting the chicken breast into cubes, leave it whole and place it in a casserole dish and add the peach compote sauce to create the glaze on top. Bake at 350 for about 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
