Who doesn’t love a panini? With their crispy crusts, melty cheese, and fresh-grilled flavors—they make for really satisfying sandwiches. It only takes about 20 minutes to make this one, which is perfect for those nights when you don’t have a lot of time. But it still feels special because the components are so tasty!

What Ingredients Do I Need For This Recipe?

  • Boneless, Skinless Chicken Breast
  • Fresh Arugula
  • Ciabatta Rolls
  • Brie
  • Homemade Peach Compote (Learn how to make it!)

What Tools Do I Need?

For this recipe, you can use either your traditional propane or charcoal grill or an indoor panini press.

Can You Cook Chicken on a Panini Grill?

This is a great option when you don’t have a traditional grill or if the weather doesn’t allow you to grill outside. Panini presses have the heat on both sides of the grill plate, which means you can cook a 1/2 in thick chicken breast in it by allowing it to cook for about 4 minutes. This is also a great option because then you can use the panini press for all of your cooking, saving you some extra cleaning!

What is the Best Bread for a Panini?

I would recommend a hearty ciabatta roll that can stand up to the weight of the ingredients in this sandwich. However, if you are looking to save on points, you can always substitute it for the weight watcher friendly bread option of your choice.

What Are Substitutions for Arugula?

I understand the sentiment here, I really need to be in the mood for the peppery flavor of arugula. In this recipe, there are a few substitutions for arugula that I would recommend.
