It's no wonder that lo mein has become a global sensation, winning the hearts and taste buds of food enthusiasts from every corner of the world.
Where Did Lo Mein Originate?
With its origins deeply rooted in Chinese cuisine, lo mein has a rich history that spans centuries. It was traditionally enjoyed as a comfort food, a satisfying dish that brought warmth and happiness to the table. Over time, this humble noodle dish has evolved, making its way onto the menus of countless restaurants, both in its authentic form and creative adaptations. Beyond its tantalizing taste, lo mein holds cultural significance as well. It symbolizes unity and togetherness, often enjoyed as a communal dish where friends and family gather to share a meal and create lasting memories. It embodies the spirit of celebration, whether it's a festive occasion or a simple gathering of loved ones.
Traditional vs. Healthy Twist: Introducing Shirataki Noodles
When it comes to enjoying lo mein, we believe that you shouldn't have to sacrifice your health goals or compromise on flavor. That's why I tried an innovative twist on the classic recipe: using shirataki noodles. These translucent, gelatinous noodles, also known as konjac or miracle noodles, offer a remarkable alternative that will revolutionize your lo mein experience.
- Discover the Secret to Guilt-Free Enjoyment: With shirataki noodles, you can indulge in the savory goodness of lo mein while keeping your carb and calorie intake in check. These noodles are incredibly low in carbohydrates and calories, making them an excellent option for those following a low-carb or keto lifestyle.
- Unveil a World of Health Benefits: Shirataki noodles aren't just low in carbs and calories; they also bring a range of health benefits to the table. Made from the root of the konjac plant, they are rich in fiber, which can aid in digestion, promote feelings of fullness, and support healthy weight management. Additionally, they are gluten-free, making them suitable for individuals with gluten sensitivities or those following a gluten-free diet.
- Embrace Culinary Creativity: The beauty of shirataki noodles lies in their versatility and ability to absorb flavors. While traditional lo mein noodles have their own distinct taste and texture, shirataki noodles serve as a blank canvas, ready to absorb the essence of the vibrant sauces and spices you infuse them with. From rich soy-based sauces to spicy chili-garlic blends, the possibilities for creating unique, personalized lo mein dishes are endless.
- Experience the Texture Transformation: One might wonder about the texture of shirataki noodles compared to traditional noodles. While they have a slightly different texture, with a chewiness reminiscent of al dente pasta, they still deliver a satisfying mouthfeel that pairs beautifully with the variety of vegetables, proteins, and sauces in a lo mein dish. The key is to properly prepare and cook the noodles to achieve the desired consistency.

Embrace the Adventure: Customizing Your Lo Mein
One of the joys of cooking is the freedom to customize a recipe to suit your taste preferences and culinary vision. When it comes to your Instant Pot pork lo mein, don't be afraid to put your own spin on it. Here are some suggestions to get your creative juices flowing:
- Enhance the flavors and textures of your dish by adding optional garnishes. Fresh herbs like cilantro or green onions can provide a burst of freshness, while a sprinkle of sesame seeds adds a delightful nutty crunch.
- For those seeking a fiery kick, consider drizzling some chili oil or adding a pinch of red pepper flakes to give your lo mein a spicy edge.
- Experiment with different protein options. While the recipe calls for pork, you can easily substitute it with chicken, beef, shrimp, or even tofu for a vegetarian twist. The key is to choose ingredients that speak to your palate and dietary preferences.
- If you do not like shirataki noodles, swap it out for regular spaghetti. You will have to modify your cooking time and methods, but it's still a simple substitution.
- Start by breaking the spaghetti in half and putting them down in a crisscross pattern. This will help prevent sticking to each other. Gently push the spaghetti down so it is submerged in the liquid. Close the Instant Pot with the lid, seal the valve, and pressure cook on high for 4 minutes. Once the 4 minutes have passed, immediately release the natural pressure release valve, and let it rest for an additional 4 minutes before continuing with the rest of the recipe instructions.

- 8 oz shirataki noodles
- 1 lb center pork
- 2 cups water
- 1 red bell pepper
- 1 lb baby bok choy
- 2 small carrots
- 1 yellow onion
- 4 cloves of garlic
- 3 tbsp dark soy sauce
- 2 tbsp light soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp mirin
- Nonstick Olive Oil Spray
- Salt (optional)
- Pepper (optional)
- Sesame seeds (optional)
Start by washing your produce.
Cut the pork into small dice and marinate with half of the dark soy sauce and sesame oil. Mix until well combined.
Turn on the Sauté setting on high on the Instant Pot. Spray the pot with the olive oil spray. Add the pork to the pot and let it sauté until it’s golden brown on the outside. Remove the meat from the pan and set aside.
Slice the onions, bok choy, carrots, and red bell pepper. Mince the garlic. Set aside.
Add the minced garlic to the Instant Pot and let it get golden-brown for about 30 seconds.
Add the water to the Instant Pot and deglaze the bottom by scraping it clean with a spatula.
Rinse the shirataki noodles thoroughly under cold water. Drain and add them to the Instant Pot, making sure they are submerged in the liquid.
Close the Instant Pot with the lid, seal the valve, and pressure cook on high for 2 minutes.
Once the 2 minutes have passed, immediately release the natural pressure release valve, and let it rest for an additional 4 minutes.
After those 4 minutes, open the pot and stir the noodles around. Add the remaining dark soy sauce, light soy sauce, hoisin sauce, mirin to the noodles and stir until well combined.
Then turn on the sauté setting on high and add the sliced bok choy, red bell pepper, onions, carrots, and pork to the pot. Stir often for about 5-8 minutes, depending on how crispy you like your vegetables.
Garnish with sesame seeds, and season with salt and pepper to your liking.
Enjoy while hot!
