Easy Ginger Carrot Spring Soup Recipe

Ginger adds a spicy zing to this easy and delicious carrot soup recipe. Ground ginger is recommended though one can experiment using freshly grated ginger.

Ingredients
  

  • 2 Tbsp light butter
  • 1 small onion diced
  • 1 small garlic clove minced
  • 5 cups chicken broth
  • 2 ½ cups sliced carrots
  • ¼ cup long grain brown rice
  • ½ tsp ground ginger
  • 2 Tbsp chopped fresh parsley
  • Salt and freshly ground pepper for seasoning

Instructions
 

  • In a large saucepan over medium-high heat, melt butter. Sauté onion and garlic until tender.
  • Add ginger and sauté briefly.
  • Add chicken broth, carrots, and rice. Bring to the boil. Cover and simmer 20 to 25 minutes.
  • Let cool slightly before pureeing with a hand-held blender or food processor till smooth.
  • Stir in chopped fresh parsley and season with salt and ground pepper to taste

Notes

Makes 6 servings of spring ginger carrot soup. This recipe freezes well.
