Easy Ginger Carrot Spring Soup Recipe
Ginger adds a spicy zing to this easy and delicious carrot soup recipe. Ground ginger is recommended though one can experiment using freshly grated ginger.
Ingredients
- 2 Tbsp light butter
- 1 small onion diced
- 1 small garlic clove minced
- 5 cups chicken broth
- 2 ½ cups sliced carrots
- ¼ cup long grain brown rice
- ½ tsp ground ginger
- 2 Tbsp chopped fresh parsley
- Salt and freshly ground pepper for seasoning
Instructions
- In a large saucepan over medium-high heat, melt butter. Sauté onion and garlic until tender.
- Add ginger and sauté briefly.
- Add chicken broth, carrots, and rice. Bring to the boil. Cover and simmer 20 to 25 minutes.
- Let cool slightly before pureeing with a hand-held blender or food processor till smooth.
- Stir in chopped fresh parsley and season with salt and ground pepper to taste
Notes
Makes 6 servings of spring ginger carrot soup. This recipe freezes well.
